From Italy to Greece—and yes, even New York (we didn’t forget about standout spots stateside)—these are the boutique hotels to keep on your radar for any spontaneous spring or summer jet-setting.

Castello di Vicarello (Tuscany, Italy)
For its 2025 opening, Castello di Vicarello in Tuscany introduces a few new faces for the seasons to come. Unveiling the Villa La Vedetta, historically a 12th-century watchtower, the building has been meticulously restored to transform into a private villa with four stories of living space, two suites, and spectacular views of the castle and onsite vineyards. The property offers their Tosco Food & Wine Retreat, which they’ve expanded with immersive events, offering insight into the fascinating Tuscan way of life, centered around Castello’s ‘farm to fork’ ethos, which allows guests to savor a taste of Maremman culture.
Montauk Yacht Club (Montauk, New York)
Is it even a New York summer without a trip to the Hamptons? Reopened for the 2025 season, the hotel’s restaurant, Ocean Club Montauk, is open with a new spring menu featuring fresh local ingredients and innovative dishes for visitors to savor. With 16 acres settled by the waterfront, Montauk Yacht Club has the luxurious charm everyone will want to experience.
The Shelborne by Proper (Miami, Florida)
Instead of a seasonal reopening, The Shelborne underwent a massive $100 million renovation, in hopes of restoring its mid-century grandeur and beauty, filled with rich history. With its refined blend of Miami Art Deco and Miami Modernism, notable updates include a newly created grand lobby bar, the property’s iconic pool with its landmark diving board, and new custom detailing to guest rooms.
Parīlio (Paros, Greece)
Recognized as the first five-star resort on the island of Paros, Parīlio is a quintessential Cycladic escape (cue ABBA’s Mamma Mia! soundtrack). Helmed by visionary hoteliers Kalia and Antonis Eliopoulos, the property is unveiling 13 new suites and villas, a tranquil spa, and its restaurant Parōn, helmed by two Michelin-starred chef Thanos Feskos. Beachside Hotel (Nantucket, Massachusetts)
Debuting this May, The Beachside Hotel brings the spirit of endless summer to North Beach Street. Mid-century modern interiors blend a sun-washed palette with playful, beachy touches—think clamshell accent pillows, rattan lamp shades, and more. With a come-one-come-all vibe, it’s the kind of chic boutique hangout where kids and adults can unwind in harmony.
LA ROQQA (Porto Ercole, Italy)
Perched above the harbor in Porto Ercole, La Roqqa reopened April 17 for the 2025 season. After a three-year revamp, the 50-room hotel now offers 1960s-inspired design, panoramic views, and sustainable touches. New this summer: a wellness space, yacht charters, vineyard tours, and cycling adventures. Guests also enjoy rooftop dining at Scirocco and access to Isolotto Beach Club—Porto Ercole’s only sandy beach.
OKU Ibiza (Ibiza, Spain)
Now open for the season, OKU Ibiza offers a serene pre-summer escape on the island’s west coast. The five-star retreat channels bohemian minimalism with 185 chic rooms and suites, a nature-inspired aesthetic, and a slower-living ethos. Guests can expect laid-back luxury, enriching experiences, and a stylish sanctuary away from the Ibiza crowds.
