Inness (Hudson Valley, New York)

4 Stars | Website | Stewart Intl. Airport

40 | Outdoor swimming pool; Complimentary Breakfast; Pet friendly | 1

Catskill Mountains; Mohonk Preserve; Lake Minnewaska

Sandwiched between the Catskills and Shawangunk Mountains in Upstate New York City, Inness equips a boutique hotel, restaurant, and member’s club. Its accommodations sit in the middle of its 220 pastoral acres. The design ethos is uncluttered and minimalistic, with many cremes and beige dressing walls. The nine-hole golf course is a fun addition, too.

The Rooster (Antiparos, Greece)

4 Stars | Website | Paros Airport

16 | Outdoor swimming pool; Free WiFi; Bar | 2

Livadia Beach; Antiparos; Peramataki Taverna

The unspoiled Greek island of Antiparos hosts The Rooster, which comprises 16 individual guest homes differing in size and a detached farmhouse. The décor takes on a minimalistic look and draws inspiration from the surrounding raw natural beauty: Wood, marble, and cotton complement the hotel’s aesthetic scheme of soothing tones. Views of the piercing-blue Aegean Sea here are nothing short of a dream.

Paradero Todos Santos (Todos Santos, Mexico)

4 Stars | Website | Los Cabos International Airport

35 | Outdoor swimming pool; Spa; Bar | 1

Palm Beach; San Pedrito Beach; Punta Lobos Beach

This brutalist fortress unassumingly pops out of Baja California Sur’s coastal desert landscape. The luxe hotel wears swaths of exposed concrete, imbuing minimalism at almost all fronts, interiorly and exteriorly.

Forestis (Brixen, Italy)

5 Stars | Website | Innsbruck Airport

62 | Indoor & Outdoor swimming pools; Spa; Fitness center | 1

Plose Mountain; Brixen; Parco Naturale Puez Odle

Located in Italy’s South Tyrol region, boutique hotel Forestis sports a minimalist décor that befits its mountainous environs. Wood, stone, and glass appear ubiquitously. The plan here was to reject decoration thoughtfully. Naked walls, greys, beiges, and browns, direct guests’ attention towards the frameless glass floor-to-ceiling windows peering out at the resident snow-capped peaks and wooded terrain.

Palazzo Daniele (Salento, Italy)

4 Stars | Website | Galatina Air Base

9 | Outdoor swimming pool; Spa; Bar | 1

Piazza Santa Caterina da Siena; Villa Aldo Moro; Boschetto

Situated in Salento, Puglia, Palazzo Daniele is a ten-suite luxe hotel occupying a 159-year-old family-owned palazzo. The aesthetic vision champions the concept of absence, which, in turn, has spawned a minimalistic design throughout the interiors — within several instances, the purposefully bare look has maximized the grandeur of the palazzo’s original frescoes and mosaic flooring.

Andronis Concept Wellness Resort (Santorini, Greece)

5 Stars | Website | Santorini International Airport

29 | Outdoor swimming pool; Fitness center; Spa | 1

Pori Beach; Exo Gialos Beach; Cape Columbo Beach

Located on Santorini, this minimalistic slice of paradise looks out at the island’s calderas and famed whitewashed villages that cascade into the Aegean Sea. Taupe dresses the exteriors here, while rooms feature shades of white, tan, creamy, and minimalist art pieces. The spa is a dream come true as well. That said, ask us about our favorite part of the hotel? Each of the suites has its own infinity pool.

Hotel Marcel (New Haven, Connecticut)

4 Stars | Website | Tweed New Haven Airport

165 | Free WiFi; Fitness center; Pet friendly | 1

Yale University Art Gallery; Lighthouse Point Park; Beinecke Rare Book and Manuscript Library

Under the interior design and branding direction of Dutch East Design, Hotel Marcel breathes new life into a derelict brutalist building in New Haven, Connecticut. A slew of neutral tones — including many shades of grey and brown — dominate the interior. Sparse sharp furnishings imbuing orthogonal angles and natural-fitting woodwork are omnipresent, from the reception desk to guestroom cabinetry.

Gather Greene (Coxsackie, New York)

4 Stars | Website | Greater Binghamton Airport

17 | Free WiFi; Pet friendly; Outdoor seating | 1

Catskill Mountains; Berkshire Mountains; Olana State Historic Park

Scandinavian-inspired design influences the aesthetic at Gather Greene in Coxsackie, New York, a two-and-a-half-hour drive from Manhattan. Expect 17 cabins comprising wood paneling and expansive views that peer out at the forest. King-sized beds kitted in Brooklinen sheets, outdoor decks with stunning mountain views, and walk-in showers elevate this bucolic stay.

57 Nord (Upper Ardelve, Scotland)

4 Stars | Website | Inverness Airport

2 | Free WiFi; Full-equipped kitchenettes; Indoor fireplace | 0

Eilean Donan; Eilean Donan Castle; Loch Duich

57 Nord comprises two design-led boutique accommodation hideaways in the Scottish Highlands: Sky House and Hill House. The getaways pay tribute to their Norse-Gael pedigree, marrying Scottish craftsmanship and modern Scandinavian design. The dwellings’ simple-form exteriors appear seamlessly amongst the surrounding green-scape. Clean lines, vaulted ceilings, and lots of glass spawn a minimalistic décor flooded with natural light.
