A Beloved Grecian Hotel Group Has Opened an Imitable Standalone Restaurant in Athens

In September of 2023, the luxury hotel group Domes Resorts took a bold step into the world of fine dining with the opening of its first standalone restaurant, Makris, in the heart of Athens.

The Makris brand is already well known across Domes’ properties, especially the beloved Domes Miramare in Corfu. Now, thanks to the culinary vision of Chef Petros Dimas and his team, the acclaimed concept offers its treasured à la carte and degustation menus beyond the confines of resort living and engages with the city’s thriving restaurant scene.

Athens has recently seen an impressive surge in high-end dining venues, attracting local and international investments. Situated in the vibrant neighborhood of Thisio, the restaurant occupies a stunning Neo-Classical three-story building–the city’s first hostel and horse house.

The interiors are an exquisite blend of modern elegance and historical reverence. Guests enter into the ground-floor dining area. Above, pieces of a smashed pot are suspended above–an homage to the joyous ceremony that takes place around Easter in Corfu. One level above, patrons will discover unparalleled views of the Acropolist from the chic rooftop terrace.

An impressive private dining room and wine cellar below–named Atiki, Athen’s ancient name–features a glass floor that allows diners to gaze upon the ancient ruins of the Eleusis Inn, the oldest known inn in Greece. The ruins have been restored by the architectural firm Makridis Associates, while every detail of the restaurant was curated by art director Stefanos Malamas.

Having worked at renowned Michelin-starred restaurants such as Varoulko and Hytra in Athens, and even Pollen Street Social in London, Chef Petros Dimas brings a wealth of experience to Makris.

Chef Dimas’ gastronomic philosophy revolves around a holistic, farm-to-table approach, emphasizing provenance and seasonal ingredients. His deep connection to his roots is reflected in the restaurant’s close collaboration with his father’s organic farm in ancient Corinth, which supplies fresh vegetables, herbs, fruits, and flowers directly to the kitchen.

In addition to its sustainable sourcing practices, Makris supports local producers, fostering a strong sense of community and cultural pride. The carefully crafted menu showcases the rich flavors of Greek cuisine, with highlights like red mullet served with rockfish and pine nut, shrimp paired with caviar and organic carrot, and silver cod carpaccio with Sigklino ham from Mani and San Michali cheese from Syros.

The two degustation menus, offering either eight or 13 courses, are complemented by a selection of extra virgin olive oils, rate botanical teas, exclusive Taf Coffee blends, and a robust wine list.

A key feature of the dining experience is the exceptional bread service, with Makris’ own mother yeast at the heart of its bakery. Cultivated with care and nurtured over time, this unique yeast infuses each 12-year-old sourdough loaf with a depth of unmatched flavor and character. The bread is served in a glass bowl, elegantly adorned with stalks of wheat, offering a tactile and visual delight.

To further elevate the meal, Makris features a signature cocktail program overseen by award-winning mixologist Christos Klouvatos. Drawing on his expertise, Klouvatos creates cocktails tailored to each individual’s moods and preferences. The cocktail list is distinguished by its focus on rich botanical aromas, with each calling for advanced mixing and infusion techniques.

Signature cocktails include Le Jardin, made with manzanilla sherry, tomato, thyme, honey and bubbles, and Ficus Carica, a blend of Plantation Xaymaca rum, fig, vermouth, and botanicals. Each pair perfectly with the tasting menus. 

The wine list spans over 240 labels from Greek and international vineyards, along with more than fine champagnes. Those seeking alternatives can choose from an exceptional range of non-alcoholic and vegan cocktails.
